mayo is something I unfortunately have become addicted to, even veganism can’t stop me. But unlike vegan mayonnaise which is usually just lots of oil, this tofu mayo recreates the creaminess without the ridiculous fat content. Plus it couldn’t be easier! I’ve been using it instead of grated cheese on top of chilli and enchiladas, and instead of egg in fried rice – would recommend.
ingredients
1 block firm silken tofu
1tbsp sriracha
1tbsp lemon juice
1tbsp english mustard
2tsp white vinegar
generous pinch of S&P
methods
- just chuck in a food processor…done haha!
